Low carb Baked Courgette with PArmesan
I have always had a love hate relationship with courgette, affectionately called zuccini in the US. I have spiralized it for a low carb pasta, made fritters, you name it! But it never quite turns out the way I visualise it to be until now. This baked courgette with parmesean ticks all the boxes and is probably as easy as it gets when it comes to a quick and easy side dish for a weeknight dinner.
Not only is this a quick and easy side dish, its great as an snack and is also a great healthier option instead of fries. For those following keto diet, this could work too, but you’ll have to check those macros elsewhere!

Ingredients
- 2-3 courgette
- Salt, pepper
- Parmesan
- garlic powder
- orgegano
- dried basil
- olive oil
how to make it
In a large enough bowl, toss together the with the courgette:
Parmesan, thyme, oregano, basil, garlic powder, salt and pepper.
Pre-heat your oven to 180 Celsius then, place Courgette on a baking sheet or parchment paper.
Sprinkle with a little bit of olive oil and slide it into the oven. Then bake for 15 minutes.
