The weather is starting to open up again, days are getting longer, the grass is getting greener, and it seems like the sun want’s to hang out for a bit and we are definitely fast approaching spring. for me, this means looking forward to lighter and easier meals so I can do other things like spring cleaning, or spending time outside. Enter this beetroot and walnut salad with blue cheese!
What is beetroot?
Beetroot falls into the same family of chard and spinach, which means the leaves of the beetroot are also edible. They can definitely be enjoyed year-round, but the best time to enjoy beets is when they are in season which is between June and October.
What are the health benefits of beetroot?
Beetroots have a range of nutritional benefits including anti-cancer properties due to it’s vibrant color. It helps with blood pressure, digestive health and most importantly it has some notable anti-inflammatory properties.
I love beets, but I realise this is not a feeling that is common with a lot of people. It’s like marmite, you either love it or hate it, but I can’t get enough. by the way, I find marmite really strange! For my friends that can’t get enough of this wonderful root vegetable, then this salad recipe will be right up your alley.
How to make a beetroot salad with blue cheese and walnuts
My favorite salads are usually ones that capture a nice mix of savory and sweet and I’m happy to say that this recipe does just that and more.
The blue cheese adds a nice savory and buttery texture, while the walnuts give the crunch and spice all supported by a bed of leafy greens.
I topped the salad off with a little drizzle of homemade balsamic, but this can go great with some oilve oil, a splash of apple cider vinegar, with some salt and pepper.
What to eat with a beetroot and blue cheese salad?
This dish would be great on it’s own of course, but if you’re like me and like to have a bit of protein then this salad would be great with a side of fish, chicken, and even beef. It all depends on what you have and what you decide. This is a flexible dish as a main, appetiser or side.

- 1/2 cup crumbled blue cheese or more to preference
