I am not entirely sure how I came up with the recipe for BBQ Pulled pork and roasted plantain with blue corn tortilla. I knew I wanted to have a taco dish, but I had not fully constructed this in my head in the beginning. I started testing elements of this dish and then It just evolved into something that I never could have imagined being so delicious!
This dish came together with ingredients that I already had in the fridge for the most part. I had some ripe plantains, I had some ready slow-roasted pulled pork and I had some blue corn tortillas. This recipe was meant to be just the shredded pork on a blue corn tortilla with the usual suspects like onions, cilantro, cheese. However, while I was in the process of making the pork, the wheels started turning.
I wanted this dish to be spicy, so I knew I wanted to include my special Nigerian hot pepper sauce. I plan to do a separate post for this later, so don’t worry. I also started planning to include some sliced chiles. While I was slicing the chiles I thought the dish needed some balance of sweet, so I thought I could add the ripe plantains. I am so glad that I did.

Ultimately, the best method is to use a slow cooker along with your dry rub of choice and/or barbecue sauce to achieve this tender base for the tortilla.
What is a plantain?
Plantains are in the same family if the banana. A popular and versatile staple in the diaspora which can be fried, roasted, boiled, steamed. whatever you fancy. In this case, I roasted the plantain for this pork taco dish. Plantains can be eaten as you would a potato or any other swede.
How to make a BBQ Pulled pork and roasted plantain with blue tortilla taco
The best way to construct this dish is to start with the tortilla, top with red pepper sauce or salsa of choice then the pork. Add the onions and chiles, plantain and cheese if desired.
BBQ Pulled pork and roasted plantain with blue tortilla

- Pre slow-cooked pulled pork shoulder
- 2 ripe plantains
- Blue corn tortillas
- 2 jalapenos or mixed chiles
- 1 red onion
- shredded cheddar cheese or cheese of choice
- Step 1
- slow-cook pork shoulder and and shred
- Step 2
- Roast/broil the plantain in the oven for 20 minutes, remove then slice in chunks
- Step 3
- Warm the blue tortillas by pan-frying on medium for 1 minute and set aside
- Step 4
- Fill tortilla with pork, plantain, salsa, onions, cilantro, chiles and cheese of choice
- Step 5
