My oldest loves his pastries and baked goods and so I was not at all surprised when he woke up one day and requested that we make donuts, they’re his favorites. So off I went searching for moulds and all the needed ingredients.
I spent a lot of time searching for the right recipe for me because there are hundreds. Some with yeast, some without, some fried, some vegan. Ultimately I settled on this recipe from delish.com
This is a baked donut recipe without yeast, so you can relax. I too was really nervous about working with yeast. I wanted to achieve that light and airy texture for a doughnut, but quite frankly, I didn’t have that type of time on my hands. Don’t get me wrong—this isn’t straightforward either (at least for me, I’m not a baker).
Anyway, the recipe calls for sour cream, which I did not have. However, I did have plain greek yogurt which is a 1:1 substitute for most things.
How to make baked chocolate doughnuts with a chocolate glaze

Ingredients
- 2 donut moulds
- 250 g plain flour
- 2 tsp. baking powder
- 1 tsp. salt
- 1/4 tsp. bicarbonate of soda
- dash of nutmeg
- 2 large eggs
- 75 g packed brown sugar
- 70 g caster sugar
- 180 ml milk
- 120 g plain greek yogurt
- 2 tbsp. melted butter
- 2 tbsp. vegetable oil
- 2 tsp. vanilla extract
- baking chocolate for melting ( 1 bar)
- Sprinkles
Directions
- Step 1
- Preheat oven to 180ºC fan
- Step 2
- combine flour, salt, bicarbonate of soda, baking powder, and nutmeg
- Step 3
- In another medium bowl, mix eggs, greek yogurt, both the caster sugar and brown sugar, milk, butter, oil, and vanilla extract. There may be some lumps in the mix but don’t be alarmed!
- Step 4
- Mix the dry and wet ingredients into a smooth texture.
- Step 5
- Fill each doughnut section mould with batter till about 3/4 of the way

- Bake at 180C for about 10-12 minutes

- Remove and let cool on foil, rack or parchment paper
- Step 8
- Please to the side and melt chocolate with a dash of olive oil in 30 second intervals until melted

- Dip cool doughnuts in choclate and top with sprinkles
- Step 10
